Cheesy Quesadillas and Chunky Guacamole – Its what’s for dinner mom!

I grew up in West Texas where Mexican food was a way of life. My next door neighbor taught me the art of making home made tamales and many other fantastic dishes. The only problem is, most of them are so time consuming! Well, when you’ve got your mexican food craving on but you’re running on borrowed time, here is a dinner that’s quick, delicious and super enjoyable for the whole family!

Cheesy Quesadillas

INGREDIENTS: (serves 12 servings)

6 large flour tortillas or 12 small ones

1 small yellow onion, minced fine

1 large can refried beans

1 small can salsa verde

2 cups shredded cheese – I use a fiesta blend of cheddar, Monterey jack and mozzarella but you can use whatever you like

left over chicken, steak or other mean sliced or diced thinly

margarine or non stick cooking spray

DIRECTIONS:

On one tortilla, layer beans, salsa verde, onions, meat and cheese. Top with a second tortilla. In a large skillet – non stick is okay but nothing works as great as black iron – add a small pat of margarine or non stick cooking spray – place the tortilla sandwich in, bean side down first, and cook until just browned. Using two large spatulas, carefully flip over and repeat cook time.

Once all of your quessadillas are cooked until the cheese is melted, cut into wedges and serve with chunky guacamole and sour cream.

CHUNKY GUACAMOLE

Contrary to popular myth, true guacamole is not spicy, nor does it contain mayonaise! I mean you can certainly add peppers if you like, but good guacamole pretty much stands alone.

INGREDIENTS:

4 large, ripe avacados, peeled and diced – reserve 1 to mash

1/2 medium yellow onion (Texas sweets or vidalias are excellent for guacamole), chopped

2 cloves garlic, minced fine

1 cup sour cream or creme fresh

1 teaspoon cumin powder

1/2 teaspoon chili powder

1 large tomato, cubed and seeded

1 small bunch cilantro, chopped fine

1 teaspoon salt

1 teaspoon pepper

1 teaspoo

DIRECTIONS:

In a medium mixing bowl, mash 1 avocado until it is just finely mashed but not liquefied. Stir in the sour cream, and powdered spices, stir to mix well. Add the onion and garlic, and stir into mixture. Add remaining ingredients
