I don’t know about you, but nothing says good home cooking to me like a wonderful meatloaf, some mashed potatoes, green beans and rolls.
This recipe makes a splendidly moist and delicious meatloaf that is sure to become a family favorite.
Ingredients
2 pounds ground beef or ground turkey (Note, if using the turkey, omit the milk)
1 package Knox onion soup mix
1 carrot, grated
1 tablespoon crushed garlic
1 teaspoon dried sage
1 teaspoon dried thyme
1 egg, mixed well
1/2 cup milk (1/4 reserved)
1/2 cup breadcrumbs (if you don’t have breadcrumbs, you can use oatmeal)
1 teaspoon salt
1 teaspoon pepper
1 small can crushed tomatoes (drained)
1/2 cup ketchup
DIRECTIONS:
Preheat oven to 425 and spray loaf pan or baking dish with no stick spray
In a large bowl, combine meat, soup mix, carrot, sage, garlic, thyme, egg, 1/4 cup of the milk, breadcrumbs, salt, pepper and tomatoes. Mix well.
Form meat mixture into a loaf or into pan and bake for 35 minutes in a 425 degree oven. At the 35 minute mark, remove from oven and drain grease from pan. Stir together remaining milk and ketchup. Spread over top of meatloaf. Return to oven and bake another 15 – 20 minutes until well cooked.
Serve with mashed potatoes, green beans, salad, corn on the cob or your veggies of choice. Also makes wonderful left over meatloaf sandwiches.
